Food pop-ups serve up mouthwatering fare that would be equally at home in a fine dining establishment. It is open every day until 6 p.m., except Sunday, year-round.

2. See Reversing Falls

The Bay of Fundy boasts the highest tides in the world; at low tide, you can walk miles on dry land to explore sea caves and incredible rock formations (like the famous Hopewell Rocks), and at high tide, the entire panorama changes as water fills in hundreds of acres of exposed shoreline. When the tide rushes in, the power of the flow is strong enough to reverse the direction of the Saint John River, creating rapids that careen raucously as the flow of the river is churned upstream. The Best Things to Do in Bathurst, New Brunswick, Canada

Located in northern New Brunswick, the city of Bathurst is relatively small, with a population of 12,000 people. 14. Fredericton Boyce Farmers Market

A quintessential Farmer's Market, this market takes place in the heart of Fredericton every Saturday from 7 a.m. to 1 p.m. You'll find fresh produce, of course, as well as local canned and baked goods, pop-ups by local restaurants and handmade items by local artisans. Visiting the local farmer's market is a great way to immerse yourself in the city's culture and is certainly one of the best things to do in Fredericton.

Things to do in Edmundston, New Brunswick, Canada

Nestled in the northwestern part of the province, on the border of Madawaska, Maine and the confluence of the Madawaska and Saint John River, Edmundston is a gem in the province of New Brunswick. Visit Edmundston if you want outdoor adventure and natural attractions in a welcoming, culturally-rich French-Canadian destination. Be aware that the majority of residents speak French as their primary language in Edmundston, but nearly all of the attractions, restaurants and hotels are bilingual and won't cause language gaps in the context of tourism. However, brushing up on some French phrases like "bonjour" (hello) or "merci" (thank you) can earn you some goodwill amongst the locals.

Located about 10 minutes from the heart of downtown Edmundston, the New Brunswick Botanical Garden is a worthy visit on your trip to New Brunswick. This 17-acre garden features over 80,000 plants, floral displays, mosaics and a butterfly house. The stunning displays are sure to be excellent photo spots with all of the lush backdrops. Be aware that the garden doesn't open until early May and stays open throughout the summer season, so if you are visiting outside of this timeframe, the garden may be temporarily closed for the season.

16. Activities Along the Madawaska River and Saint John River

Edmundston is situated between the intersection of the two aforementioned rivers, meaning there are plenty of river activities available for all. This interpretive center preserves two of Canada's most significant archaeological finds: the Augustine Mound and the Oxbow Site.
