Partners Ben Jacobs and Matt Chandra draw on family recipes to create dishes typically found only on or near American Indian reservations. Their version of fry bread, flash fried in corn and canola oil instead of lard, is flavorful, puffy, chewy and satisfying. Guests choose their own toppings such as High Plains bison, ground beef, chicken, beans and vegetables, served in an assembly line style similar to quick serve Mexican restaurants.
